A renowned chef with two Michelin stars has responded to food safety authorities following the Food Standard Agency’s lowest rating given to his restaurant. The agency awarded a one-star rating to the upscale Ynyshir Restaurant and Rooms in Ceredigion, Wales, indicating the need for significant improvement. Despite this, the chef patron defended the restaurant’s high standards, stating they are among the best globally due to their unique approach.
In light of the rating, Gareth Ward, a prominent chef featured on MasterChef: The Professionals, emphasized that the restaurant sources top-quality ingredients from around the world, with a significant portion being served raw. Ward highlighted that inspectors focused on the use of raw ingredients, particularly questioning the quality of imported fish for sashimi.
Ward explained that despite adhering to international standards for raw fish, inspectors raised concerns about the sourcing and aging of certain ingredients, reflecting their disapproval of traditional aging techniques. While acknowledging some paperwork discrepancies, Ward remained firm in his defense of the restaurant’s innovative culinary practices.
Addressing the inspection results that flagged the restaurant’s food safety management and cleanliness, Ward admitted areas for improvement but reiterated his commitment to offering a distinct dining experience. Undeterred by the rating, he emphasized the importance of pushing boundaries and maintaining unique standards, expressing disappointment but not shame or regret over the assessment.
Ynyshir, as Wales’ only two-star Michelin establishment, is lauded for its exceptional dining experience, characterized by a diverse menu curated by Chef Gareth Ward. The restaurant’s culinary journey, highlighted in the prestigious food guide, showcases Ward’s expertise in crafting vibrant dishes using premium ingredients, particularly drawing inspiration from Japanese cuisine.
